Buffalo Chicken Meatballs

On Sundays, I usually try to make something new and exciting that could potentially make it into my rotational dinner dishes, and I knew I wanted to make something with buffalo sauce. After much debate (mostly because Ryan and I never agree on what we’re in the mood for), I decided to take a stab at making buffalo chicken meatballs. Outcome = AMAZEBALLS!!!

Recipe:

1lb ground chicken breast

1/2 onion, finely chopped

2 garlic cloves, minced

1 tablespoon parsley (I used dried, but fresh works as well)

2 tablespoons butter

1/2 cup frank’s red hot hot sauce

3-4 scallions, chopped for garnishing the meatballs

How to:

Preheat oven to 400 degrees F.

In a bowl, mix ground chicken, onions, garlic, and parsley. Add some salt and pepper. Form the mixture into meatballs and place on a non-stick baking sheet (I was able to make 12 medium sized meatballs). Drizzle with some EVOO and place them in the oven. Bake for 25-30 minutes.

While the meatballs are in the oven, melt the butter in a skillet and add the hot sauce to it.

Once the meatballs are fully cooked, toss them with the buffalo sauce, and garnish with scallions. Serve with bleu cheese or ranch dressing.

DONE!

GF Turkey Meatballs with Linguini Alfredo

I got this meatball recipe from Gluten Free Goddess and it is A M A Z I N G!!

The only things I did differently were:

1. I used turkey meat instead of beef

2. I used honey instead of molasses (because I didn’t have any molasses on hand)

GF Mozzarella Sticks
I made these delicious mozzarella sticks on Superbowl Sunday for Ryan and I.  They came out great… just as good as the glutenous kind!!
Ingredients:1/4 cup gluten free flour mix2 cups dry gluten-free breadcrumbs (I used flavored ones, but if you only have plain ones, just add some salt, garlic powder, onion powder, oregano, etc. to it!)1 teaspoon salt4 eggs2 tablespoons milk1 lb mozzarella cheese, cut into 3/4 inch x 3/4 inch strips1 cup vegetable oil
Directions:
Heat the oil in a pan.Whisk eggs and milk together in a bowl. In a second bowl, add bread crumbs (season them here if they’re plain). Place flour in a third bowl.Coat each piece of cheese with flour. Dip in egg and roll in bread crumbs.Carefully place each cheese stick in the hot oil and cook until golden, about a minute on each side. Place on paper towels to absorb excess oil. Serve hot.
* Make sure you don’t cook them fr longer than a minute… i did this for the first stick and it came out all melty and deformed (although it was still quite tasty).

GF Flour HEAVEN!!

So my dad, who recently decided to go gluten free because he has RA, was shopping in the gluten free isle of Walmart in North Bergen, NJ a few weeks ago and ran into one of the Walmart associates, who informed him that all the GF Bob’s Red Mill flours were on sale for $0.50 each (they were trying to get rid of some of their inventory)!!!!!!!!!! He immediately called me and I told him to buy EVERYTHING on the shelves! We ended up with about 50 bags of different flours like Brown Rice, White Rice, Almond, Corn Meal, Choco Chip Cookie mix, Oatmeal, Sorghum, Quinoa, Corn Bread mix, etc. I’m pretty sure I’ll be living off these for the next year, thanks dad!
